...Freezing the fully ripened unpeeled bananas for a day or two, at least, then thaw and add to your recipe. I have stored bananas in my freezer for months and they thaw beautifully. Bonus, something about the freezing releases all those wonderful oils making the bread even more flavorful.

Banana Bread
2 medium sized bananas, peeled and mashed 2 eggs 1 Tbs Oil 2 Cups flour 1 tsp Baking Powder 1/2 tsp Baking Soda 1-1/3 Cups Sugar (reserve 1 Tbs to sprinkle on top of dough)
Use the Quick Bread cycle and pull the bread about 12 minutes before the timer shuts off.

I try to have one or two loaves in the freezer at any given time as they make great last minute gifts. It's dangerously delicious :)
Most of what I planted this year had poor yields but my tomatoes are kicking butt. This is my 3rd haul in 2 weeks and I should probably do another in a couple days. Thats about 6 lbs right there. The small orange ones are an heirloom variety called golden something or other and are sweet. The others are some kind of beefheart variety from seeds I took from the best tomato I'd ever had. All the seeds from that one germinated I ended up giving a lot of the seedlings away. Oh yeah... and they're delicious. Planted as many as I could and its paying off.

Digging through a box of crap from an old deceased friend, gone now 14 years, and I came across a hand written receipt from when he purchased an Uzi from his other buddy in the 1980's for $600. I have all his stuff because it was willed to me, but I don’t have the gun. What a trip though. There was once a time when you could private party an Uzi to someone in California.👌
Inflation is nuts right now. We went food shopping for everything but meat last week and it cost us $130. We generally only buy raw vegetables, dairy, pickled products, and minimal snack food.
I finally pulled the trigger on a chest freezer and $200 worth of Costco meats.
I suggest you all do the same.
We already have a years worth of food prepped. If we started that now, it would be too expensive.
