The secret to the Best Banana Bread is...

...Freezing the fully ripened unpeeled bananas for a day or two, at least, then thaw and add to your recipe. I have stored bananas in my freezer for months and they thaw beautifully. Bonus, something about the freezing releases all those wonderful oils making the bread even more flavorful.

I have this recipe taped to my Red Star bread machine.

Banana Bread

2 medium sized bananas, peeled and mashed
2 eggs
1 Tbs Oil
2 Cups flour
1 tsp Baking Powder
1/2 tsp Baking Soda
1-1/3 Cups Sugar (reserve 1 Tbs to sprinkle on top of dough)

Use the Quick Bread cycle and pull the bread about 12 minutes before the timer shuts off.

I try to have one or two loaves in the freezer at any given time as they make great last minute gifts. It's dangerously delicious :)

Dude is right on everything except skunks. Best scent ever. Whenever I drive by a dead skunk, I slow down, roll down the windows, and breath it in deep. The best.

Why unpeeled? That's not a good idea. It will be incredibly difficult to get the peel off.
I do agree about storing bananas in a freezer. I got some in my freezer right now that have been there for months. If I ever want to make a smoothie or bake something there they are.

If they are fully ripened, they're going to be mush inside, which is good for bread, but yeah very hard to peel! I use scissors to snip the thawed end and then squeeze out the banana like toothpaste. I stumbled on this a few years ago and it works like magic.

If I have bananas that are starting to bruise all over, I just peel them and throw them in a bag in the freezer. Then there is no need to thaw them to get the peel off.

Seriously though, there's something about freezing with the peel on that releases all those awesome oils.

OK, throwing them into the freezer now, 1 naked in a "condom" and 1 fully clothed virgin!

So, how long can they last simply as fully clothed, or do they begin deteriorating after the recommended 2 days?

Good question, I've never made it in the oven. I'd have to go to my Joy of Cooking book or try allrecipes.com for info on this.

i tried your recipe. Baked it in the oven at 350F for about an hour.
it's not that good.

I usually use this recipe: https://www.womensweeklyfood.com.au/recipes/banana-bread-recipe-10338 , although not always and rarely with walnuts. I sometimes wing it, leave out the maple syrup or use a recipe without maple syrup but I have NEVER seen one without brown sugar before, and I think that would effect it more than anything. I'm aghast!

I have never heard of freezing bananas improving the bread though, I usually just use "fresh" ones before they go off. If I do freeze them I peel first. I might have to try it.

It's addicting! Pro-tip: slice the bread before freezing and it will come apart and thaw faster.
