I bought some beef tallow for the first time and sautéed some onion, jalapeños (of course) and garlic in it. Absolutely fantastic flavor! That went into a sausage mix for stuffed bell peppers that I’m going to use tomorrow.     (CookingWithGoats)

I buy the Dynamite Dust, Dragon Dust and Reaper Dust. All of his stuff is good. He even has sweet stuff for ribs and smoking pork roasts.

I quadrupled the recipe. Little less water, 20% more lentils I’ll add half way through to thicken it up.
I’ve dialed this thing in over the years. Have some frozen naan from Trader Joe’s in the freezer.
I’ll post a finished product pic. Might add star anise this time.

Here we have some Fresno chiles (the one on the bottom left is a jalapeño. We did both) stuffed with pork sausage from a local rancher. The mix includes half of the guts from the peppers blended back in, along with a free range egg and Tillamook sharp cheddar, with same cheddar again on top for a bit of crispiness. No panko this time

This is the recipe. I have followed it correctly except I soaked the pork in the OJ and lime juice overnight and added jalapeños to the bake.
This always turns out awesome. Will make tacos with cilantro and onion after pan frying the carnitas after the oven. Recipe calls for broiling, but I like more control on the stovetop.

Went for the jalapeño salt and the hot lemon pepper salt. Finna put that shit on some grilled fish this weekend! One little wet fingertip dip in each of them just to get a taste and they are hot!

I’m using a Piedmontese Chuck roast and a rub mix very similar to the recipe that I already had in my pantry from smoking a pork roast some time ago. I’ve found that most of these rub recipes have the same ingredients, just in different measurements.
