Hey goats, I figured I’d make a video for you with the charcoal starter thingy that people were asking about. Realizing that many of you are not likely regular users of a charcoal grill, I decided to show a simple recipe to use your kettle grill as a smoker/ indirect cooker. I’ve seen people really fuck up some chicken on the grill so here is a foolproof method to get some incredible chicken that is even safe for beginners. Enjoy.

I bought some beef tallow for the first time and sautéed some onion, jalapeños (of course) and garlic in it. Absolutely fantastic flavor! That went into a sausage mix for stuffed bell peppers that I’m going to use tomorrow.     (CookingWithGoats)

I buy the Dynamite Dust, Dragon Dust and Reaper Dust. All of his stuff is good. He even has sweet stuff for ribs and smoking pork roasts.
The Reaper Dust is fucking fire! I’ve been using these rubs for about eight years now.

I quadrupled the recipe. Little less water, 20% more lentils I’ll add half way through to thicken it up.
I’ve dialed this thing in over the years. Have some frozen naan from Trader Joe’s in the freezer.
I’ll post a finished product pic. Might add star anise this time.
