For some reason my concord grapes are just this week ready to be picked and I still have a shitload of immature grapes. Still got a bunch more to do (sanitation and the like) but the work will be worth it very soon. Just going to make 5 gallons of wine this year and the rest I'll use to make grape jelly. So good. I'm canning while I wait for my smoker and the last batch I had 3 of the jars I did of tomatoes turn a very dark color, almost black. this was the first time this has happened to me and I've been canning for years. Jars and lids were sterile. Been doing it the same way my Grandmother taught me and I have never seen this before. Any ideas as to why?
