Chicken fried steak is a kind of schnitzel. Probably finds its finest form in Texas thanks to all the German and Czech immigrants. I use venison cutlets (tenderized) as well as beef cutlets. It is one of my favorite meals, period. You have to make a good gravy to go with it. Use a lot of black pepper to season the gravy. It is best with mashed potatoes, with the meat and taters drenched in gravy. God it is good!!
