I bought an electric that had me so fucking pissed off, I threw it out the fucking door, then proceeded to go out and smash that piece of shit to bits.

So, anyways, I buy another hand held off of amakike, and sure enough after a few weeks I’m about to throw another conniption, and wifey comes out with an edlund, and says use this. ( Guess she knows me)

Install it, and that fucker works beautifully, no more smashing can openers in the yard. I guess it better after I looked up the price.

There is definitely truth to that, but by roasting garlic, you are in effect changing and muting the flavor. Once muted as such, the differences are not as pronounced, yet yield a very pleasing flavor and texture.

This all has to do with the “Chemistry of cooking”, and the variety of garlic. For example, if you were to cut the general store bought “soft neck” variety as opposed to “elephant” variety, and slice thinly, the soft neck would be far more pronounced over the elephant. However, once roasted, the soft neck will lose much of its intensity, and while there still is a difference, it will not be as pronounced.

I would recommend that you give it a try, much as a raw onion can be tamed and sweetened by caramelizing it via sauté.

Try it with elephant garlic, you get a shit ton more, and it has a slightly buttery flavor.

I do this all the time, especially for crab cakes, you make a lemon aioli ( fresh mayo), and the roasted garlic, delicious.
