People build an image of themselves as they build their identity. As a facade, they're usually not that well developed or containing any substance. So, when somebody pokes at the facade it hurts the effort of building it. This then threatens to expose the insecurity underneath.
I have talked to a former prisoner who did say that almost everything said was fine as a joke, but if you ever got called a punk then you needed to start fighting immediately. This was not a matter of insecurity, but rather of survival.
Many people take their facade as a tool of survival and behave as such, but in reality they're exposing their insecurity in the process.

Ok, so you want a real dialogue, but you're in a location which requires a facade. You can either break the rule of the environment and face the consequences, go to another environment where you don't have consequences, or stop dealing with people. Usually, I find that I break the rules of the environment early and get in minor trouble, take the (you can't talk like that) chat, and then don't have to worry too much about consequences (or promotions).

It is tiresome to go deep into what their interested in, as you have to sit and listen to dumb stuff. But, there's functional utility in being friendly and I'm usually surprised at the level of depths that some people are capable of, just on a dumb subject.
