I Don’t Just Live By Jalapeños. Muh Stuffed Fresno Clilies!

Here we have some Fresno chiles (the one on the bottom left is a jalapeño. We did both) stuffed with pork sausage from a local rancher. The mix includes half of the guts from the peppers blended back in, along with a free range egg and Tillamook sharp cheddar, with same cheddar again on top for a bit of crispiness. No panko this time

Nice. We do cream cheese mixed with the chopped pepper innards, sometimes adding a strip of cheddar, then wrapping in bacon.

We’ve tried the cream cheese, not sure I like it. However, I found that bacon becomes way too greasy and by the time it cooks, the peppers are mush. Try prosciutto, it crisps up much faster with no fat

Try making a sandwich with sliced turkey, salami, avocado, and cream cheese. The smoothness of the cream cheese is amplified by the tanginess of the quality salami.

Hotter, but not immensely so. I love the flavor of Fresnos.

Very nice, a great way to use up the peppers in the garden. I found that its best to bake for a few minutes then broil them at the end, if you just bake them the peppers get mushy.
