Pork loves a braise. Low and slow. For some reason, being lazy (sorry mexibros) is to your benefit. Lower heat, more time, lots of moisture with salt. Maybe read your favorite book for a while. Or just get high. introduce layers of lightly applied oils and aromatics.

This was a pre baked, for four hours, roast from two days ago. I then fry it up I a pan with roast juices to make the taco worthy carnitas. Tonight I did it a little on the softer side. The first night, two days ago, I fried it up really crispy. It can go either way.
You get different flavor profiles based on fry pan time.
