Regarding muh fried rice a week or more ago, someone suggested I use oyster sauce, which I had never tried. Gots me a bottle of Kikkoman brand and I took a swig outa the bottle right away. I instantly recognized the flavor profile and yes, this is the magical key to fried rice, I can tell. I’m finna make a pot of rice today or tomorrow to keep on hand for my next batch. I put it in red sauces for dishes like sausage and peppers, and my Italian wife and her mom absolutely love it. Took a few years for me to give up my "secret ingredient" but it blew their minds. I don't care for plain old tomato sauces, even when blasted with herbs and spices etc.

Oh yes, they have fat and the skins. I render my own skins and fat, but if you don't have time, something like this. Go for the fat that comes from pasture-raised birds if at all possible. Same with all animal fats.
That might seem expensive but it takes a bit of fat globs and skin to render a quantity of fat. Chicken tastes better than goose or duck fat to me. Speaking of goose, when you roast a goose, save ALL that fat.

I used a microwave twice in the last 10 years to heat up wax to pull out my nose hairs.
I want to tear out the one I have above my stove and replace it with a non shit vent.
That said, you can't compare a microwave to a rice cooker. Its so easy. Just pour liquid a little bit over the rice and press a button. It even keeps it warm.
But wait, there's more. It also makes buckwheat. Oatmeal. Cream of wheat. Soup. Bone broth. Etc.

Shao haing rice wine is the other flavor that you may be missing. Also, for beef and pork, marinade it in baking soda, that is the trick to getting the correct texture. 10/10. Also works on a pot roast in a crockpot. Neutralize the baking soda with vinegar after it is all cooked.

Please explain. I make a mean fried rice but looking to create a more memorable meal. got the rice wine, sesame oil, precooked rice , egg, bla bla - might add in the chicken stock to boil rice now too.
