Pork Tenderloin Roast, stuffed and rolled

Pork is from Corti Brothers, Sacramento. Cilantro, garlic, onion, Asiago, bacon, panko, salt, pepper, red pepper flakes, olive oil, spread on a bed of spinach leaves.
I’ll tell you how it turns out. It’s a small roast, one lb. before stuffing, so I’m guessing 1.5. Cooking times may vary!🤣

If you sear the outside on a pan with some oil before you bake it…

I stuck in just like you saw it at 375 for 30 minutes and it came out awesome. Tender, but a bark might have been nice.

Thank you. We just had the whole kitchen redone. An entire remodel, everything stripped down to the framing. All new plumbing, electrical, etc. The countertop is Cambria quartz.

Looks good!
You might consider wrapping it in bacon or stuffing with butter and/or something more moist than just cheese.
The problem with pork tenderloin is it’s too lean and long cooking will dry it out. I love a pork shoulder roast. My mom does the best crackling.
But that’s just my palate

Well, 30 minutes at 375 uncovered and it turned out killer. I may have overspiced it a bit, but the pork was really surprisingly tender. I think it may have to do with the source. I’m gonna buy one for half the pound price at my local shit store and see how it turns out.

Thanks. I don’t usually do oven stuff but I have a new oven and it will be getting cooler soon so I’m gearing up for some winter baking!
