Canning carnitas today. Carnitas means “little meats” in Spanish. This recipe calls for powdered onion and garlic, which I only ever use for rubs, but in the interest of time, rather than chop a bunch of stuff, I followed exactly, however I added a half Serrano pepper to each jar. I used picnic shoulder roast, about ten pounds. It’s leaner than butt roast and cost a tiny bit more due to boneless. I don’t want to debone, I just want to cube and stuff jars. I’m sure this would have been better with fresh onion and garlic, but I have three other irons in the fire.
