Killer Carnitas Going in the Oven Right Now!

This is the recipe. I have followed it correctly except I soaked the pork in the OJ and lime juice overnight and added jalapeños to the bake.
This always turns out awesome. Will make tacos with cilantro and onion after pan frying the carnitas after the oven. Recipe calls for broiling, but I like more control on the stovetop.

I made puerco pibil once with the oj and lime juice. Left it to marinate for like 6 days cuz I got distracted. Found 3cm long hatched tape worm larvae in the meat after cooking it. I guess the acids made it think it was in something's stomach and time to decyst

Great recipe. Because I didn't have to scroll for 10 minutes to get to the recipe. Before you begin section is good, too.

What kind of marble is that?

[ - ] TheOriginal1Icemonkey [op] 0 points 3 monthsMar 3, 2025 00:22:02 ago (+0/-0)

That is Cambria brand quartz.

This looks great. Pork is a very economical cut compared to beef, and even chicken.

I made a version of carnitas I saw on Americas Test Kitchen and basically cooked cubes of pork cooked with lard in a Dutch oven for a few hours until they were crispy. It was amazing, I’ll have to do that again.

Americas Test Kitchen is the best. I get two of their magazines at my house monthly. Can’t say I can keep up with the depth of their recipes, but I do like the knowledge I gain.

It's NOT your gut, something else will burn, baby, burn. Good luck!

Have never experienced that meme, even that time when I drunkenly added 3 carolina reapers to my soup and wanted to die. Stomach felt like lava, and carolina reaper vomit in your nose is pretty memorable. No particular anal pain, just whole body agony for 5 hours.

You didn't actually pass the lion's share of the reaper and it's capsaicin oil past the last muscle in the human digestive tract.

That's why there was no O-Ring pain.

I have been growing hot peppers for 20 years or so, and a lot have come and gone. Can't explain why some A-holes are more sensitive, but I can see how that might put someone off of hot peppers.

Is by far the most fiery thing I have ever eaten. I am 100% certain that anyone who consumes it will feel the burn from entry to exit.

[ - ] Sector2 3 points 3 monthsMar 3, 2025 00:43:02 ago (+3/-0)

I have half a bottle left of Dave's Insanity Sauce. It's pretty hot. The Right Wing Death Sauce from @peppercave is in the same class, although the bottle is 3 times larger. (set for life)

12 other hot sauces, a couple ounces of reaper powder, a grinder of ghost pepper powder, a jar of my blended dried peppers, and around a half pound of hot peppers still on the plants are about all the rest I have left.

Have never had it burn on the way out.

Exhorresco 7 pot primo sauce from Burns and McCoy is supposed to be - or was - the hottest non-extract sauce in world. I think it's hotter than Dave's Insanity Sauce, and IMO has a much better flavor. Been awhile since I've had some, so going to stock up soon.

Then why eat it?

[ - ] KosherHiveKicker 1 point 3 monthsMar 3, 2025 13:05:47 ago (+1/-0)

It actually has good flavor when tempered down.

I had chinese last year that was extremely hot. I was in pain for hours and on the shitter all night. My stomach hurt like it was being run over by a bus from inside. Then the butt burned all night

Without getting into 5HT-3 receptors and capsaicin-sensitive visceral nociceptive pathways, google results attribute the exit burn to a combination of incomplete digestion and "normal" levels of sensitivity.

Gastrointestinal issues
People with inflammatory bowel disease (IBD) or other gastrointestinal issues may be more likely to experience burning when pooping after eating spicy food.

Maybe I'm just insensitive in general, or my digestion is more complete? Haven't researched this phenomenon, but I suspect very few hot pepper lovers experience the exit burn. Metabolic variations are probably involved, in the same way only 40% of people can smell the asparagusic acid when urinating after eating asparagus.

[ - ] Ragnar 1 point 3 monthsMar 7, 2025 00:45:25 ago (+1/-0)

It wasn’t as much my butt burning but more so my stomach hurting. Yes, there was a definite burn on the way out but the tummy ache was horrible.
I generally avoid hot food like the plague but I have been peer pressured into having it a handful of times. And every fucking time it burned and hurt my tummy like a mofo.

And yes, I can smell asparagus in my pee. The same as vitamin B

For some reason, any type of jalapeno affects the "bo-bo hole" in a most radical way.

Who talks like this? Why do boomers use toddlerspeak? Retarded fossils like you need to shut the fuck up.

The only "people" I've encountered who report irritated defecation after consuming chili peppers were jews. And they were indeed fixated on infantile speech, especially when it came to anuses and feces.

Freud outed himself, and by extension his whole species: jews can only think about raping children in the ass, and they get bonus points if the child or (better) baby shits on them during the rape.
