If you replaced the all spice with crushed chili pepper, you basically just made the standard taco/fajita spice. Maybe needs a little more cumin.

If you want to make the most basic "Mexican" spice for taco meat or anything else, you can basically just mix cumin with chili powder and salt. Chili powder has some cumin in it already, but not enough for tacos. Chili powder should have all the other spices already mixed in (garlic, onion, oregano, paprika, etc). Definitely always a good spice for meat, but I wouldn't use it on a "nice" cut. The whole point is to basically drown out the flavor of the shitty sun-rotten meat you're using.

I'll tell ya what I use. Tsp of cayenne, chipoltle and chili powder. Half cup of no sugar added ketchup, half cup of no high fructose corn syrup. Amazing BBQ

Protip, if you need that many spices for steak, you are doing it wrong.
Steak is delicious on its own.
You just need enhancers.

Salt enhances flavor.
Fat distributes flavor.

Brush steak with salt butter as it sits for a few minutes after it cooks.
That's all you need.

If you want spices, go nuts with the baked potato.
The baked potato heads spices.

Protip: Collect steak juice. Add seasonings. Melt butter. Mix. Add to potato.
