‘Twas a Labor of Love, but Worth It! 🍝

submitted by dingbat to CookingWithGoats 7 monthsSep 22, 2024 20:29:22 ago (+28/-0)     (CookingWithGoats)

I had a ton of cherry tomatoes from my garden that I needed to do something with. I figured today would be a perfect day to make some spaghetti sauce and homemade noodles. When I went to the local grocery store my son works at to pick up the rest of the goods and told him the plan, the biggest smile emerged on his face (nothing better than making my son happy).

When I got home, I roasted the tomatoes with some olive oil garlic cloves, salt, pepper, and thyme.

When finished, I cooked down the tomatoes and garlic with some onion, oregano, basil, and of course, more thyme.

I took an immersion blender to the mix and my “crushed tomatoes” were complete.

I browned a pound of beef and a half pound of pork with a large onion, added my crushed tomatoes, salt, two cups of water, a cup of tomato paste, and a dash of red pepper flakes and brown sugar. I let it simmer on low for three and a half hours.

In the interim, I made my noodles. I haven’t quite mastered these yet, but I’m getting better. I kneaded the dough for ten minutes, let it rest for 30, and used my pasta maker I inherited from my grandma. Cranked that baby out! \o

I put the pasta noodles in for 1.5 minutes right before I was ready to serve.

I started this venture at 1pm and we just finished eating, but I made a ton of sauce and will have lots of leftovers that I will freeze. The noodles? I may have to used boxed next time, but the homemade are a million times better and tastier! My young man was extremely happy and so was I :)

Fuckin nice. I love and hate making tomato sauce. Hard to find time to do it right anymore, so I end up taking shortcuts. Then I nag myself for taking shortcuts when it tastes like I took shortcuts.

Exactly!!! Thank you, Perry.

I enjoy making a good tomato sauce but have honestly stopped doing it as much since finding a brand at least 8/10 as good as I can make that doesn't have a bunch of BS ingredients. Chopping herbs, garlic, etc isn't even worth it when that shit is close enough.

Curious, is it from Italy?

Awesome job. Sometimes it is well worth it to take the time to make a special meal... even when it takes 6 hours to make and 30min to eat >_< haha

Damn, when you having us round for dinner then? I'll bring some parmesan reggiano round to top it off.

I’d be a willing cook for you niggerfaggots.

Dang mate, this looks really good.
I have a serious problem with eating stuff like this though. I try to immortalize every jar I make or am given and it inevitably goes bad. Get to look at it for ages though.😂

I enjoy making my own tomato sauce for pasta. I too have an immersion blender for just this thing, as well as soups. I can’t say my sauce has had the attention you’re has. I’ve never roasted first, I rather just pop em in the pan. Might try that next time. Also, I’m far too lazy to make my own pasta.

My son and I are like passing ships these days. We both had a day where not too much was going on, so I wanted to do something special for him. Trying to hang onto our moments as long as I can.

Yeah, before you know it they don’t call you for weeks, months on end.

Does the immersion blender deal with all the seeds and skin?
I have tons of cherries right now, but the thought of all that in the sauce is not appealing.

[ - ] dingbat [op] 1 point 7 monthsSep 22, 2024 23:05:27 ago (+1/-0)

That’s a great question! The immersion blender takes care of about 90% of the skin and seeds (you really have to cook down the mix for a while). Afterward, I take out the visible skin with a fork. I also believe the slow simmering helps too. The sauce is smooth and ends up looking really silky. If I were to be making a plain tomato sauce, I would’ve put it through a strainer for sure.
