Tonight's dinner: Meatloaf made with ground beef, ground beef liver, and ground cow hearts.

submitted by PeckerwoodPerry to tellupgoat_based_edition 2 monthsMar 3, 2024 21:14:48 ago (+22/-0)     (tellupgoat_based_edition)

I ain't gonna lie, the texture seemed a little chalky. The flavor was on point though and I felt full after just a relatively small serving. Paired it with corn and red wine. 8/10. Would definitely do that again. Maybe burgers or meatballs next time.

There's definitely something psychological about eating heart. Just doesn't seem right. I've had grilled chicken hearts before, and those were excellent. Figured I'd try some cow heart.

Anyway, if you get the chance to try it you definitely should.

But will it make a good samich tomorrow? That's how you know you have a good meatloaf!

That's my favorite part about meatloaf. Toasted sourdough, liberal use of mayo, cheddar cheese, and two tomato slices. That shit rocks, and yeah it should be pretty good tomorrow. Probably even out the texture.

Liberal use of mayo suggests your load is dry and flavourless

[ - ] BlueEyedAngloMasterRaceGod 1 point 1 monthMar 3, 2024 23:39:07 ago (+1/-0)

mayo is just vegetable oil isn't it?

And egg yolks

Soy oil. At least in Hellman's and dukes

Holy shit, my wife made her super amazing meatloaf tonight too! It was awesome. Sounds like yours was too.

Don't think ours had any hearts in it, alas. Next time.

Oh that's really cute that you think my wife cooks. I like to eat good, well cooked meals bro. The Mrs can't boil water without burning it, her toast belongs in Auschwitz. I don't know how she can simultaneously burn and undercook food at the same time. I swear to God she's afraid of the pilot light. She does wash a mean set of dishes though, so that's something.

"She does wash a mean set of dishes though, so that's something."
Are you kidding? That's EVERYTHING!

Dishes are a secondary skill. Sammiches are a primary skill.

You failed in vetting her

I'd be hard pressed to find a woman that's a better cook than I am. Spent most of my adult life cooking for a living.

Hearts make it disgusting

[ - ] MaryXmas 2 points 2 monthsMar 3, 2024 21:41:44 ago (+2/-0)

I had beef liver tonight and while I like a steak better, I know it is good for me and I eat it for the vitamins. The heart is still in the freezer and I think I will put it on skewers and then on the grill. I have had it that way a while back - it is a Peruvian style of cooking. I just make sure to really clean out the blood and then it tastes better (both heart and liver).
We get a beef every year and eat every part of it. My favorite cut is the tail- absolute favorite, I eat it before the porterhouse. We have also done hog, turkeys, and just general bulk meat. I still have about 20 too many chickens I need to put in the freezer.

That's awesome. I don't have a way to store food like that, but I'm thinking about how to get that done.

I got this from a guy at the farmers market that just sells good organic meat. I tend to take his recommendations because he's never steered me wrong, no pun intended.

[ - ] MaryXmas 2 points 2 monthsMar 3, 2024 22:11:59 ago (+2/-0)

Freezer is the first step, they are less than you might think. 600 ish?
I know a rancher and get a 400 lb beef. Grass fed, organic, no antibiotics. Maybe 14-1700 depending on weight and slaughter cost. Worth every penny. The ground is a little expensive but you get the brisket and porterhouse so it all works out. Hogs are cheap - comes out to maybe 2-3 dollars a pound. I love a good hog.

Edit - the standing rib is a $150 cut so factor that into the price.

We're working on getting our own place right now, currently renting. We're getting there, but the road is long and full of sacrifice.

Same

[ - ] Ragnar 0 points 1 monthMar 4, 2024 00:19:58 ago (+0/-0)

Is it though? Is it good for you?

[ - ] MaryXmas 0 points 1 monthMar 4, 2024 08:12:08 ago (+0/-0)

Yes. Liver has a lot more nutrients than the other parts of an animal. Always save the liver and eat it. Just not polar bear liver because it has too much vitamin a.

Yeah, I know what the “carni” internet gurus say, but historically it was a poverty food. Moreover, the scientist who lived with the eskimos early last century, saw that they would eat everything except the offal which they would give to the dogs.
Additionally, you see within the carni clowns there are two factions. One with Shawn baker says no need for organs at all.

Lastly, contrary to mainstream propaganda that says if it tastes good spit it, a lot of healing type gurus would say we can trust our tastes and cravings as long as we are not having artificial foods. All offal tastes disgusting and we have to go to extreme lengths to disguise it. You can do your own research but things that taste bad are bad for you. Usually toxic or slowly delirious.

Anyway, after much studying I have come to a conclusion that you can have it occasionally or even semi regularly if you like the taste, but it’s not the end all be all.

Cheek and tounge are pretty good.

[ - ] Ragnar 1 point 1 monthMar 4, 2024 09:37:30 ago (+1/-0)

Cheek, yeah. Tongue, yuck

I'm a big fan of lengua tacos.

Lucky charms taste delicious. Guess now I have an excuse to indulge.

[ - ] Ragnar 0 points 1 monthMar 5, 2024 21:53:55 ago (+0/-0)*

Lucky charms are full of preservatives and chemicals and artificial dyes. If you wanna have brekkie cereal, you can do organic oatmeal or homemade organic cornflakes.
The best breakfast objectively is eggs and steak/bacon with pancakes/toast/biscuits and milk coffee

E: I missed your sarcasm but it’s misplaced bc I said in my original comment the taste rule only applies to the natural foods and environment, not artificially created hyper palatable ultra processed “foods”

That sounds pretty disgusting

[ - ] Razzoriel 0 points 1 monthMar 4, 2024 07:19:54 ago (+0/-0)

Cook offal with milk. Heart, liver and tongue especially lose that slightly sour taste that lingers.

[ - ] UncleDoug 0 points 1 monthMar 4, 2024 01:51:10 ago (+0/-0)

Chicken hearts are great.

[ - ] HatefulHomelessMan 0 points 1 monthMar 4, 2024 01:04:43 ago (+0/-0)

I just want to know why you called the meat and liver "beef" but acknowledged the fact that you are talking about a cow. Do you mean it was definitely the heart of a female bovine, whereas the meat and liver may have been from a male?

[ - ] Ragnar 0 points 1 monthMar 4, 2024 00:19:34 ago (+0/-0)

Organ ground beef tastes disgusting and is highly overrated

[ - ] BulletStopper 0 points 1 monthMar 3, 2024 23:44:40 ago (+0/-0)

And the wine?

[ - ] Ragnar 1 point 1 monthMar 4, 2024 00:22:18 ago (+1/-0)

Wine is great, let it flow.

Wine is probably the only way he swallowed that monstrosity he cooked
