I'm not sure what "all the cool AI toys" means exactly but AMD's GPUs are fine. Maybe for some niche application -- like AIs -- but does that actually impact you? Besides if you're gong with Linux then their GPUs are much better supported.
AMD is king on Linux, no one cares for ai, only thing Nvidia has over AMD is Ray tracing and even then shits still somewhat in its gimmick stage. It's getting better but so is AMD at it too.
