done in a pellet smoker, 225 for one hour, then 300 until internal temp hit 205. about 3-4 hours total.

no I'd normally do that with butchers paper but I didn't have 6 hours to kill so I did a different method, no wrap. will do it like this from now on.

Yeah, that 123 is good but takes forever. I’ve been nigger lazy the last few times and just tossed em in the instant pot and then browned them in the oven.

Next time you do have time and a thermometer try it this way. not as fall apart as 321 but I actually liked it more.

Interesting. I like tender, but the fall apart mushy stuff is too much. A little effort to pull the meat off the bone without leaving anything behind is key, I think. Food is about texture, mouthfeel and edibility.

It uses wood chips in a little slide out/in tray at the bottom. It doesn’t have a feeder or auger.
