Had this happen in Vanauatu.

The owner was sitting at a table behind me with a friend. And gave a head nod to the cashier.

I noticed it in my peripheral.

Ordered some local drink and the lady charged me 3x the price shown on the menu and looked hesitant while doing it.

I paid and as I did that the placed filled up with patrons.

So I stood behind the owner at his table to make him physically nervous.

He kept turning around and looking up at me while his friend had a very nervous look on his face.

I waited for the place to clear out and orders filled.

I went up to the counter and said "Now give me the correct change."

She looks over to the owner and he nods his head.

She nervously give me the correct change.

"I appreciate that."

Turn around and just stare at the owner as I'm walking out the door.
