Why’s there only one smurfette in the whole village?
And how’s there a baby smurf?

Well,there's not just one. From the old series,there's Smurfette,Sassette,and Grandma Smurf. Of those 3,only Grandma is an actual smurf. Smurfette and Sassette were created through magical clay.

Then there's Vexy,who's also a creation of Gargamel,though she wasn't supposed to be a smurf but a "smurf-like" creature. And then they just pulled a whole village of female smurfs right out of their ass.

As for Baby Smurf,in the episode he's introduced,Brainy asks where Baby Smurfs come form and Papa gets real nervous while Smurfette just smiles at him. It shouldn't be hard to deduce what happened from there.

Smurf reproduction is non-physical, as all baby Smurfs are brought to the Smurf Village from an unknown location on the night of a blue moon by stork.

Gargamel created Smurfette so that she would use her charms to cause jealousy and competition among the Smurfs in order to cause their fall.

Smurfette was a golem created by the jew Gargamel to destroy Smurf society by turning them into gold.

Smurfs obviously reproduce by egg laying and like many other creatures the genders live separately from each other only interacting to mate

No,they're actually sentient fruit. They grow on trees.
