I make many variations of this. I also make breakfast versions with egg, sausage or bacon. Throw in some tater tots. I use leftover taco stuff and make these. Its good if you need a change. I always brush on the beaten egg and then put shredded cheese all over it and let it melt then flip it and start adding your ingredients! It take a little practice to get it folded right but once you figure it out it gets easy. Everyone around me loves it. @DukeofRaul

Egg/tortilla thing is a no go but that cucumber avocado salad is a definite will be making. Shame I'm only learning about it now in the dead of winter instead of when it was summer.
Looks great but anything with 9 lbs of cheese is going to be amazing.
That egg looked farm fresh and of the foods its worth to pay extra for organic and farm fresh.
Id try this again with non-gmo sprouted corn tortilla and organic eggs only (no cheese.) Turn into a street taco by adding meat of choice + raw onions.
