I made Banana Bread 🍌🍞!

I forgot to add salt. But they came out fantastic!

My parents made so much banana bread in my childhood that both my sister and I despise it. Glad you like yours.

Those are good looking loaves. Can you share your recipe? The secret of good banana bread is the quality of the bananas, the proportion of ingredients, and the cooking time.

2 cups very over-ripe bananas
2 cups ap flour
1 cup compacted brown sugar
1 cup halved pecans
1/2 cup coconut oil
2 large eggs
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
(it needs the salt, I just salted the butter I put on it afterward to make up for the mistake)
1/2 tsp vanilla extract (I didn't have any, but they still came out really nice)

2 Standard bread tins: 325 F @ 50 min

I'm amazed at how light your bread came out. When I do it using over-ripe bananas, the bread always comes out much darker, and I imagine would be even more so using brown sugar.

I'll try your recipe the next time I buy coconut oil. I usually use softened butter, and if I don't have vanilla extract, I'll wait until I buy some. I find it indispensable. I'll compare this with the several other recipes I have to see the differences in quantities and baking temperature. Many thanks!

Sure thing, you're quite welcomed. Yeah, I was pretty disappointed in myself that I didn't check for vanilla extract before I started making it, and then one-upped that by forgetting the salt.

I've found substituting coconut oil in confections works perfectly. I don't even notice a coconut smell or taste, though often whenever I give treats away people seem to notice it, but they tend to say they like it/that it fits.

Zucchini and coconut. made for each other. Btw I'm about to just start making my own vanilla extract. I feel stupid for not starting earlier.

Apparently making flavor extracts isn't difficult. My brother is a physicist and does goofy sciency things for amusement. One year he made a number of extracts of different herbs and plants. He never used them, he just wanted to see if he could do it. I think I'm going to ask him to show me how he did it since it worked out so well for him.

Please do and update if you can. Online it says vodka and vanilla beans and to let it sit for 8-9 months.
But half of me can't believe I've been paying this much for just those 2 ingredients.

Good lord, is that all it is? I'll call my brothers (no need to visit) and get the benefit of his experience. If that's the case, I'm never going to be without real vanilla extract for the rest of my life. The stuff you buy in the grocery stores is disproportionately overpriced.

I spoke with my brother last night. He confirmed that was the process, and he used vodka, recommending a better brand than the cheapest stuff. These are some of the essences he made:

cinnamon
jalepeno
orange
lemon
coffee

He said he didn't use vanilla and had no idea why. I'm going to buy vodka and little bottles this week.

I so wanted the process to need a chemistry set. Thats bull that all it was is a two step and wait game.


All right...ummm I don't know vodka. Any suggestions? Because that was my game plan just buy the cheapest gas station bottle ... wait is there .. is there a vanilla vodka? Can you add the beans to it to make it extra or will that ruin it?

I'll look it up. Pretty sure someone on the internet has tried it.

what do you recommend using? (assuming you drink, I'm sorry idk if you do or not)

Not worth it . Using vanilla vodka makes no difference.
