It's worth mentioning that the Talmud is a commentary on the Torah. There is no Talmudic Jew who understands those books as being distinct from Torah; that goes for all other products of Rabbinical Judaism. It's all supposed to be commentary and explication of Torah.

Christianity makes a very big deal about the deposit of faith having been a kind of seminal thing, with the offices of public revelation being closed (many would say after the death of the apostle John ca. 100 A.D.).

Orthodox Judaism doesn't treat that office as closed. You have the addition of many new 'canonical' books through the centuries, including sefer Yetzirah and sefer Zohar, and other Kabbalistic works. Is Christianity older in one sense than Lurianic Kabbalism? Absolutely. Is Christianity older than Baal worship? No.

I mean Kabbalism is a hodgepodge of Hellenistic philosophy (esp. Pythagoras), eastern ideas, and a bunch of other things, and it still understands itself as demonstrating only what is esoteric in Torah.

This is the funny thing about religions sometimes, is they get to determine categories like 'old' and 'new'. When people want to fight over religion, many times you'll hear arguments to the effect of "this is old" and "that is new". If you're going to accept a bunch of Aristotelian philosophy into your religion, a millennium after Aristotle lived, then you need to find a way to make that addition old. "Oral" traditions were really helpful with this. By claiming oral tradition, you can throw just about everything you want backward in time, and then tell the people you stole it from that they actually got it from you!
