Some plant-derived oils, such as coconut, are predominantly composed of saturated fat, and are also resistant to oxidation. Palm oil is also resistant since it contains large amounts of both saturated and monounsaturated fats.
I've switched to coconut oil for most things. I figured that since it's shunned as being bad for you due to fat, it's probably good. It's a little tricky to deal with since it congeals at room temperature. I just make "ice" cubes out of it in the freezer, then pop them out into a bag in the refrigerator. Easy small units to use when cooking.

Buy a slab of pork belly and cut it up into no larger than cubic inch pieces. Smash them in, fat side down in a large skillet or pan, medium/low heat for 30 min until it sweats some fluids out, then high heat for another 40 minutes to boil/deep fry all excess water out and thoroughly cook pork.
Now you are left with dinner for family and a couple jars of pork fat for cooking with later. You can mix the crispy pork belly cubes in a sweet spicy sauce, have it in soup, or by itself on some rice or mashed potatoes.
It seems like this might be that best choice for plant based cooking oil based on my research. But my experience with it is limited. How does it taste in say, a stir fry. I dont really want a coconutty flavor.
Olive oil is fine for cooking most things (generally use virgin for sauces/dressings and non-virgin for cooking). I haven't noticed a difference in flavor since switching.
Some coconut oil tastes like coconut, others do not. Those that do not typically will have something on the label saying there is no taste. Coconut oil is also good for dry skin, chapped lips(there is literally nothing better for these 2), can be used as a mouth wash with excellent results, goes great in coffee. It really is an incredible substance.
