Humans are omnivores, we are meant to consume both plants and animals. What kills us is heavily processed food. Plant-derived oils go through hundreds of both mechanical and the more dangerous chemical processes to extract oil from the seed. For example acids, centrifugation, heating anc cooling, steaming, distillation, hexane, refining, flashing, pH adjustment, chemical washing.

Actually, no, it is bad on medium heat. Maybe fine for very low heat slow cooking like a slow eight hours roast. (Debatable, still).
The most traditional and healthiest way would be to use it cold like you dress your salad with it or use it as a condiment or maybe use as a drizzle on food. Pesto, for instance, has it and it’s only added in food at the last minute AFTER cooking is done.

Bacon grease is fine if you use it straight away, but it goes rancid very quickly due to high moisture content.

But, it's more of something I would add to a bread, or fry some hashbrowns in it. Certainly not using bacon grease as a recipe substitute, or filling a fryer with it.

I use it for frying eggs and for use the same evening. Ive used it in many ways; for cooking fries, for frying chickenb all kinds of shit. If "bacon" sounds like it would go well with whatever I'm cooking, I'll use it. But like you said, right away. I dont save it.

Some plant-derived oils, such as coconut, are predominantly composed of saturated fat, and are also resistant to oxidation. Palm oil is also resistant since it contains large amounts of both saturated and monounsaturated fats.

I've switched to coconut oil for most things. I figured that since it's shunned as being bad for you due to fat, it's probably good. It's a little tricky to deal with since it congeals at room temperature. I just make "ice" cubes out of it in the freezer, then pop them out into a bag in the refrigerator. Easy small units to use when cooking.

I find it's cheap... for now, which is one of the main reasons most consumers prefer seed oils in the first place.
Getting people to switch to animal-based oils will entail resurrecting and popularizing the old methods of gathering and recycling that have been lost to time and modern convenience, especially considering things like lard and tallow are growing relatively expensive.

Buy a slab of pork belly and cut it up into no larger than cubic inch pieces. Smash them in, fat side down in a large skillet or pan, medium/low heat for 30 min until it sweats some fluids out, then high heat for another 40 minutes to boil/deep fry all excess water out and thoroughly cook pork.

Now you are left with dinner for family and a couple jars of pork fat for cooking with later. You can mix the crispy pork belly cubes in a sweet spicy sauce, have it in soup, or by itself on some rice or mashed potatoes.

It seems like this might be that best choice for plant based cooking oil based on my research. But my experience with it is limited. How does it taste in say, a stir fry. I dont really want a coconutty flavor.

Olive oil is fine for cooking most things (generally use virgin for sauces/dressings and non-virgin for cooking). I haven't noticed a difference in flavor since switching.

Some coconut oil tastes like coconut, others do not. Those that do not typically will have something on the label saying there is no taste. Coconut oil is also good for dry skin, chapped lips(there is literally nothing better for these 2), can be used as a mouth wash with excellent results, goes great in coffee. It really is an incredible substance.

The refined (non-virgin) kind is completely flavorless and has a very high specific temperature (good for frying).

The virgin kind is rich in coconut flavor. As with any virgin oils, it should not be heated to frying temperatures, and is better added towards the end if you want the flavor.

Note that in spite of being hailed as a healthy oil by many, coconut oil contains mostly saturated fats and has been shown to significantly raise bad cholesterol. It used to be my go to but I use it sparingly now.
