So today, I ate a three year old sausage patty.

Well, yesterday, really.

Well, this whole last month or so. One a day.

About three years ago, I freeze dried a whole bag of these sausage patties https://u.smutty.horse/mlejdzwtpcu.jpeg

I expected it to fail because of the fat/grease content. If it didn't fail, I fully expected them to go rancid.

To prep them, I popped them onto a baking tray, slammed them in the oven, patted and squeezed some grease off. When I pulled them out of the freeze dryer, they were somewhat bendy and looked like really really old sausage patties. Like it'd been sitting under a McDonald's grill for three weeks because of lazy workers.

I tried one. It tasted fine though it was a little tough and chewy. So I put the lot in a thick mylar bag, threw in some O2 absorbers, sealed it up and put it on a shelf for worse days.

Opened it up and... it looked the same. Smelled fine. I was wary. Licked one. No rancid taste. At all. Surprising but not surprising since it's the air that makes oil go "off".

So I popped one in a small pot of boiling water for about 5 minutes. It came out... pretty much the same. Didn't rehydrate, really. Oh, sure, not gonna break my teeth or anything but it wasn't before. It was still bendy.

So I've been popping one of those on a bagel every morning for breakfast for the last month-ish.

Pretty tasty.

And then there's the three year old green onions. So got a fuckton of green onions about three years back. Cut 'em up, freeze dried, put in vacuum sealed jars and put them on the shelf.

They're starting to turn a little brown and don't clink in the jar like they used to.

I opened a jar up. Smelled fine. Licked on. Tasted fine. Just looked off. So I put the whole jar in a soup. Tasted just fine. Weak and limpy like you might expect from an onion that had been frozen and thawed.

But I'm still alive.

So...

Sausages: Pass the test.

Onions: Pass the test.

Not surprised about those sausages. Things are so filled with preservatives and random shit that I wouldn't expect them to go bad easily.

Still, it's fat/protein for SHTF stuff, so whatever works that doesn't directly poison you.

I'm impressed.

Less impressive, I once ate 7 year old Hostess Donuts. Was helping a friend move, when we picked up his couch, there was a never opened box of Hostess donuts under there...the chocolate covered ones. Fella says :hey, I lost those when I moved in here". Date on the box checked out as long expired years before.

They coat those donuts with a wax seal and add heaps of preservatives. I’m betting you could let them sit in the open air and they would just go stale and not rot. Kinda scary to think what’s actually in those things.

I can take beans, rice, etc only so much before I hate life. Sure, I'll eat it and they'll do great but they're not my favorites. One of the best rules is to preserve and stock/store food you know you'll eat.

Cheap hotels have no breakfast /continental breakfast. Mid level usually have just pre-prepared crap eggs and stuff. Top tier hotels want ridiculous prices like $22 for a breakfast burrito. These days hotel breakfast just doesn't factor into my booking decision

Absolutely. If you get time (or bored), check out my past posts where I experimented with long term storage of eggs. It seems that 4 months is about the longest I've been able to reliably store them in a fridge. I explain the technique and dangers in that post.

Man, a good vacuum sealer is totes amazing. You can use them to seal bags and jars and there's a marinate container you can use it on. Just pop your meat in there, throw in your marinade, attach the vacuum tube, let set for a few hours to overnight and your steaks taste amazing.

Thanks. I'll always answer that question. It's a Harvest Right medium size. They run about $2000 give or take depending on if there's a sale or not. The company is the perfect example of making something in your garage and then making a market for it. When I received mine, pretty much every component except the main chamber was either defective or damaged. I contacted the company and they sorted me right now, replacing about $1000 worth of parts at their own cost. Though it's out of warranty, they still support me if I have a problem. I just call them up, explain the issue, they run me through some troubleshooting which includes collecting log files from the freeze dryer.

I have rations and I have a well-stocked pantry. The pantry is for economic bullshit. The freeze dryer production also needs to be tested before I have to rely on it with no other choice. Right now, if I open something I freeze dried and it's bad, it's just a little more expensive than when I bought it. If I do this after a collapse, I might be relying on that to stay alive.

Besides, what am I going to do with a pantry with over a year's worth of food if I gotta bug out? I can't pack it all up and run. That's what the rations are for.

As a side note (for other goats, you seem to know this already) rancid meat is actually not dangerous, it just tastes and smells funny. Rancid is where oxygen interacts with the fat in a chemical reaction. What's dangerous is rotting where things like bacteria are consuming the food, reproducing, and leaving waste products.

There's also botulism which absolutely thrives in low oxygen environments such as vacuum sealed containers. That's why with everything I take out I always do a taste and then a small portion, heated to above 160-170 for at least 5 minutes. So far, the only things I've had issues with were a few bags of tomatoes, mushrooms, and (homemade) yogurt but to be fair, my main controller board in the freeze dryer had gone to shit and needed to be replaced. Since I've replaced it, I've had no trouble.

I've not yet started to dry meat but I've been told it'll do wonders if you rehydrate with some sort of beef broth. And patience of course.

As to vegetables and greens, I generally end up grinding them up and then sealing them. You don't really have to specifically try to rehydrate them then as when you put the powder in whatever dish they will take the heat and moisture from whatever you are cooking and the increased surface area ensures it happens really quick.

BTW, rehydrated freeze dried avos make some damn find guac. I call it Apoc-amole. Pretty easy to grow your own limes too.

Yes, using broth to rehydrate your meat is amazing. Or, for that matter, any good marinade.

Veggies can be ground, eaten dried, or rehydrated as you please. Of course any problem with that is the same as you get from freezing and then thawing them: potential mush. So... tomatoes are amazing freeze dried. You can eat them dry, put them in sauces, salads, and so on. Just don't expect to put them in water and get a fresh tomato :)

Pemakin is just dried out meat and meat fat put in what used to be an animal skin bag and sealed and it'll last for 20 years. If there's no water in it there's nothing for the bacteria to grow on. This is why a lard does not need to be refrigerated and is sold in your grocery store right next to the bottled oils unrefrigerated.

Freeze dried not frozen. Takes all / nearly all of the moisure out of them. If you seal/pack with O2 removers you'd be surprised what you can preserve and for how long.
