Because what else do you have to do?

Besides at some point you might not even be able to buy cement

If I remember correctly they used coral which made it stronger than modern concrete and the recipe was forgotten like greek fire for centuries

I think they also included salt in the mix so it reacted differently with salt water and was stronger.

The muslims had a weaker version too or something like that

After a brief survey of the topic, it seems the ash from certain areas (such as Mt Vesuvius) had high amounts of aluminum which helped to form this crystalization when it made contact with sea water. @dukeofraul

Which city made better concrete, Herculaneum or Pompeii you think?

Well apparently the harbor at Baiae which is on the northwest part of the gulf of naples is where they have some good marine cement structures. You can knock yourself out with this

...which is kind of boring but has a neat little table at the end where it lists quotes from Pliny and Seneca on how to make the stuff

Shows how to create calcium oxide aka quick lime (calcium hydroxide after adding water) from limestone or seashells but no time explaining how to get volcani cash, we can presume because nobody is going to hike a volcano(?)

Insomuch, if I'm going to home depot to grab a bag of volcano ash - guess what else I'm going to buy at the same time? Quick lime
