If I were to make make one of these, I would try employing the same technique Koreans do with their onggi (kimchi) pots and include a little wood ash in the clay for the antiseptic property to help keep outside organisms from infiltrating the pot.

Or you could do what I did. I bought two 55 gallon drums and collect rainwater. I have them in my back yard because some communities have made it illegal to steal the governments water from the sky. So I hide them.
