I just recently found out you can plant the tops and just keep growing those without the beet root. Have you tried it? Does it taste the same?
Oh and I tried a new dish with roasted beets and sweet potatoes with chickpeas. I added cinnamon like the recipe said and it was hot. Not spicy but there was a bit of heat.

Recently I grilled an eggplant cut into quarters with salt, pepper, garlic powder, olive oil, and covered in the chili flakes used to make kimchi. Was great.
Definitely has a bit of a different taste than Italian dried chili flakes, also more of a powdered consistency. Also I can really coat the eggplant in them (we eat very spicy though)

I saw this one recipe for eggplant with mushroom buns like a hamburger kind of deal . I want to try it but I think my family would disown me if I served it for dinner.
I was forced to try a lot of dishes as kid that I thought were repulsive. Once I became an adult and tried a few restaurants, and had dinner at other peoples houses I realized my mother was a horrible cook and should never have been allowed in a kitchen.
I had the semi-opposite experience. My mom was a random element. If she tried, it was fantastic, but if she didn't give a fuck, who knows!
Also, dated cans or packages didn't mean shit to her. I was the first to chow down on some vegetable (forget) and immediately spit it out. My mom was like, "Eat it, you ungrateful bastard!" I turned to my dad and said, "Make her eat it first."
My dad agreed. My mom ate one bite, grabbed the entire dish and threw it in the garbage pail, haha!

You "shell" them by separating the leaves rather than frying them whole. Throw a couple of handfuls of leaves into the fryer basket and magic happens.
