It's not, you need to constantly be watching to avoid things burning or sticking to the pan.

But this is a great recipe for any potluck, so I reccomend going with it.

If you want to get fancy, use veal and mushrooms, put the meat in a complimentary marinade before cooking begins, and add some cheese to the finished product just to make it extra French, also, be sure to save some of the gravy for garlic herb potatoes, it goes great together.

Lots of stirring to prevent burning and sticking too, your arm will be tired by the end of it, you will have the asymmetrically muscular right arm of a coomer if you make this enough without remembering to switch your hands when stirring and mixing.

Do a big ass batch once or twice a year and can it up. Homemade hearty beef stew and potato leek soup should be on hand for if you get sick, nothing better imo. To hell with the shitty store bought soups.

I did the Julia Child version recently, which is much easier. She has you rolling the beef in flour before frying it, but has reduced a bunch of the other steps. It's also easier and less likely to burn if you use a super heavy cooking pot like the LeCreuset in the vid.

This is a solid recipe. The only thing I would recommend is making a bouquet garni out of the bay leaf and thyme before this is put in the oven. Just tie them together with some cooking string. Maybe even add some stalks of italian parsely. This makes it easier to remove at the end of the cooking process instead of having to fish out each individual piece of thyme which is a pain in the ass.
