Recipe trick: Freezing then grating chilis

I learned this trick from a Gordon Ramsay recipe. You freeze a chili (jalapeno, serrano, whatever). It could take only half an hour depending on your freezer. Ours is the frost free kind and half an hour does it.

After your chili is frozen you grate it on a handheld cheese grater. Add the flakes to your recipe. It gives whatever you're making a nice kick but doesn't overwhelm it since the bits are so tiny and spread out through the dish.

I did this with the hamburger meat I prepared and it was great.

This seems like one of those life hacks that are just more effort than actually doing the thing properly, If you are cooking its just more practical to spend 30 seconds extra dicing the chilli finely, If you want to even smaller add some salt and puree it with the side of a knife like you do with garlic, You could also just use chilli powder or Chilli sauce.

I freeze the chillis I grow over summer to use all year round. They literally freeze for years

I do the same with ginger, makes life so much easier and ginger is so much nicer when it is like a fine powder ... but I hate store bought dried ginger powder it's awful!

Great idea. Do you cut out the insides and the seeds first or just grate around them?

No cutting out of anything; seeds fall into the mix whole (which is no biggie). If you're sensitive to the heat of jalapeno chili seeds you should remove them though.
