I learned about the stamping in school in Germany and from first hand accounts. Did a little search, looks like it was called overprinting, mostly for letter stamps but also for some bank notes. Inflation was so fast they simply stamped new values on paper money.
I don't know how that worked in practise. it seems it would be easy to simply make your own rubber stamps and stamp your own money. And since things changed so fast, why not stamp an even higher value.
Most coins don't have much collectors value, unless they are in pristine uncirculated condition. Coin collector have weird rules, like if you polish an old coin, it becomes worthless. It need to have the old patina on it for some reason.
I collect coins just for my own enjoyment, and I'll polish them just so I can enjoy a nice looking old coin.
If your coins have any precious metals in it, they simply be worth their weight in silver or gold. You could simply sell the entire lot on e-bay, or craigslist and the like, or go to a pawn shop.
I inherited my collection from my grandfather.
But these days collecting is very easy, you can simply buy stuff on ebay and dedicated coin stores.
Before internet you would go to coin collector meetings, get con magazines that would have sections for buy and sell.
Pawn shops are still a place you can find stuff. Garage sales and estate sails can be a good source, but takes a lot of leg work and luck.
