I dated a vegetarian and she was always having medical issues. Her body was falling apart. I would eat pizza, burgers or whatever I wanted and I was in much better shape.

To be honest I see a lot of vegetarians who look good for their age. I put it down to a lack of fat in the vegan diet, makes their skin age, plus all the missing micronutrients add up.

The total lack of features on the 2021 photo is odd looking. Where is his throat? Should be able to see it on a guy that skinny. It's just a mass of flesh, looks perfectly flat and even.

I was graying 20 years ago, but then I took Food Grade Diatomaceous Earth weekly for a year. All the gray hair was and still remains gone.

I think the resolution is lower on the first photo. The meat photo has more focus issues. Also, smile vs blank look invalidates most of the comparison.
