Been wondering this since the days of Quake, which was all brown. I think technical limitations was the reason back then, but what is the excuse now?

It did. Quake could do only 8 bit color (256), and even then few of these colors were special, so called "self illuminated" and they could glow in the dark. Most of the palette were greens and browns. But it was made 30 years ago, and now you could run it on a cpu from smart lightbulb or toaster, provided you soldered some external memory and a screen.
