All this time I was digging, thinking I would pop out in China.

It's All About The Angle Of Planetary Penetration...

If you could take an elevator to the center of the earth, would you be weightless, crushed by the gravity of the whole planet or stretched like a rubberband with half the earth's gravity pulling on your head and the other half pulling on your feet?

These questions need answers

If you, hypothetically, could make a hollow spot in the core and keep it hollow (and not burn up, and somehow breathe, etc.) then you would feel weightless inside it, yes. There would be some tidal force heating effects but nothing you'd notice unless you started moving really fast.

Somewhere in the upper mantle, though, you'd experience slightly higher than surface gravity while also being pulled in all four directions at once.

You can you just have to dig at an angle.

That is indeed the naturally-expected outcome of 71% of the total surface area being (non-frozen) water!
