They probably don’t charge more due to negotiated rates with insurance. The health coverage jews know what it really costs because hospitals and insurance hire from the same pool of negotiators. My father in law worked for UCLA hospitals before he went to Blue Cross of California. He knew what medical facility costs were.

If you run you kitchen as "not for profit", you can pass along the savings to the hospital staff who chooses to eat on campus instead of leaving or bringing food in.
