The guy in the video comes off as a total fucking toolbox but the info is right. There are a few brands that use actual chicle (or mastic,) at least in the us. But most gum is indeed just vinyl. You might as well be chewing on a Funko Pop.

A lot of plastic is just made from the waste glasses of regular oil production so that's why it's used.
