Salt is incredibly important, you die without it. Hot sauce helps in shitty situations where food quality isn't exactly the best. See: any war zone. Even the little things will help keep you sane enough to survive.
I ended up buying several #10 cans of milled white flour and wheat berries from the LDS church. I have a few other varieties and these are rating for up to 30 years. My hope is never to use them.
I also keep a LOT of salt including magnesium and potassium because if we start to starve to death, you’ll need electrolytes. In fact, many of us would benefit from drinking salt water in the morning since every cell in the human body uses sodium ions.
The kidneys are great at excreting excess sodium. If dietary sodium is insufficient, then they must reabsorb which is taxing and eventually destroys the kidneys. I’m almost certain this is one of the reasons so many people have kidney issues. That, and type II diabetes which is basically insulin resistance.
I looked around for a long time and finally settled on Costco when the price went down to $2,500 for a palette of survival food. Sure, it's not the best quality survival food, and apparently not the best tasting. But it's survival food and it guarantees a solid 3 months of food for my family. A lot longer if I supplement it with other food I can kill or find.
And I bought a bunch of salt, pepper, sugar, and other herbs and spices. So it should be alright.

This isn't true, any more. The plastic liners in the cans degrade and the metal used to can modern food are made of alloys that leach nasty shit into them and spoil the food.

I know plenty of people fine after eating 10 year old canned goods. Yet I’ve run my own experiment, and over 2 dozen times in the last 10+ years, anything more than 2 years expired, and it turns my stomach for a couple days. Tuna seems to be fine, but half a dozen soups, stews and fruit. Older than 2-3 years expired and it’s 100% of the time.
Good thing we're not talking about plastic containers, we're talking about plastic lining cannned goods. Keep up boomer, sounds like you ate out of too many 1950s & 1960s BPA lined cans.
Shit your grandma canned at home can last longer than that. A lot of properly canned store bought items can last as long(er).
Of course, stupid me just assumes that everyone knows not to eat ruptured or bloated or fucking dented or smashed cans regardless of age. Lookin' at you.
Make your own. My local WinCo has food-grade buckets and plenty of large bags of stuff. Oats, rice, beans, lentils, whatever. If you do it right it will stay good for a very long time. Canned stuff too. So what if a few will go bad, just buy more to account for that. Rotate through supplies if you have a family large enough.
Don't skip on iodized salt, pepper, garlic, and Tabasco. All are incredibly valuable in a warzone. Vinegar too for cooking, cleaning, laundry, etc. And soap. It helps keep disease at bay, very important when hospitals aren't available.
The real thing to find is a good local water source and some water cleaning equipment.
What about water? You can build a portable stove top/camp fire still out of a whistle kettle, number 6 bung, 1/2 stainless steel baffles, 16 ounce mason jar, 3/8" check valve, and 1/8 to 1/2 brass fittings for both ends for about 50 bucks buying all items new. Use neoprene silicone bungs and washers for the fittings. No pipe tape is needed.
Buy what you like to eat. I love Mountain House freeze dryed stuff, so I bought #10 tins when they've been on sale. Costco once had an amazing sale that I spent $1800 on despite already being stocked up. The stuff fit onto 2 pallets:-) I bought a case of diced chicken off ebay once, stuff was perfect condition. Some other prepper food place had another sale. Mountain House direct also has sales. Make sure the sell-by date is current, the stuff will easily last 30 years of put in a cool/dry/dark basement corner, but buy it on sale.
I've got multiple 5 gallon buckets (Mylar vacumn packed inside) of beans, rice, lentils and oats. Be aware that is a crapload of food though, even if the cost is right, you'll likely be tossing some at some point. The lentils were something like $22 for 25 lbs, and in 2 or 3 years we've eaten less than 25% of them. In 2 years we've gone through 1 of the 2 5 gallon buckets of rice. We supplement that with our garden, in winter time, we still buy a lot of produce. I've also planted edible foods in wild places. Sunchokes, Camas, Wapito....unlike say, tomatos which everyone will recognise as food, no one knows it's food except me. I've gotten some friends and family into that as well.
My wife often considers me crazy. I once bought gas masks for every child on the block. Mentioning it to one of the parents and letting her know that I didn't have one for either of them (the parents) brought a shocked and stunned look to her face. Then later when the pandemic hit and I had well over 100 of the N95 masks which everyone wanted...LOL.
The realty office. Grow and can your own meat and produce. Grocery store stuff has been stripped of nutrients, including the fresh produce sold there. You could buy from farmers markets and can from there, but that shits expensive. Dry aging meats is also pretty simple if you have a cold, dry place for it.
I've been rethinking the survival food thing. Yeah raw materials for sure rice beans wheat,vinegar ...powdered egg? maybe but im thinking more long term is buying tools/weapons and investing in outdoor cooking stuff.
Like im not trying to run a restaurant at the end of the world just survive so i don't understand all the "gourmet options" these survival companies are offering. Plus food exhaustion is real thats a thing.Keep that in mind when buying 20 buckets of already prepared meals.

Considering 13oz of freeze dried steak runs approx $120, chicken is more like $80, you would be saving something like 70-80% per can produced yourself. Considering the machines cost $3000, you could recover the cost of the machine in a couple months.
You would probably have to invest in specialized canning equipment or at least a vacuum packer and some quality bags. But you're talking about maybe $3 in electricity for something like $70-$80 savings per can, and you could probably run 3-4 cans of food in that freeze drier per 24-36 hours. So you're saving about $300 per day for maybe an hour or two of labour.

I’d try Happy Yak out of eastern Canada somewhere. (Freeze dried)
Healthier than the popular ones like Mountain House etc, and taste better imo.
