This is kooky cargo cult superstition.
Flour is used in other things like cake, tortillas with no yeast at all, it does not make you sick. All pizza dough is is flour water and yeast. Same exact thing as bread.
All pizza dough is fermented too. Different preparations take a different amount of time to ferment. If you use slow acting yeast in the refigerator yes it takes 12 hours. But fast acting at warm temp goes in an hour or so. All the yeast does is eat some of the starch and turns it into gas and alcohol. Then it dies in cooking.
It is not magic.

It could be from the yeast still being too active. You are basically eating starter if you eat it too quickly.

So yeah, you can eat cake right away. But if you are going to make bread with that much starter it should have some time to mellow out.

Not all of the yeast dies if the edges of the pizza are under cooked where two world meet, thicker crust combined with the cooling of the sauce. This leaves some under cooked dough that could still have active starter in it. This isn't bread that goes in an oven for an hour.

I don't let my pizza dough sit, I put it in the oven about ten minutes after I make it (with yeast). I don't notice any problems from it.

Sourdough (fermented) does seem to be healthier than breads made from unfermented dough.

However, I believe that all of this "gluten sensitivity" is a result of the Roundup (glyphosate and other chemicals) used on wheat crops.

And this is a result of commercialized, highly processed food. Centuries ago, these diet related health problems would cull you from the gene pool.

The Fresh made daily shit comes in a big bag put on water, stuffed into a fridge overnight, and sits for a few hours before it's appropriate to use.

I also worked in a pizza place and ate alot of pizza as result and never had this I feel lethargic and tired feeling.

I always feel like shit after eating pizza. I’ve written this down. It takes me four days to feel normal again and be back in ketosis.

During this time, I’m lethargic and low dopamine with poor sleep.

Which sucks because pizza is by far the best tasting food.

Regardless of whether what this guy is claiming is true or not, it's based on the premise that "made fresh daily" means they use the dough the day they make it. If they make dough every day, but allow it to sit a couple of days before using it, "made fresh daily" is still a true statement.
