I'm growing lebanese cucumber this year (trying to). Most of the seeds didn't come up - probably too cold but I've got a few plants doing ok.

They're all right. Skins are a little weird. Have you tried any pickling/dwarf varieties? That's where the real haul is at. A 3' vine can make 100+ cukes.

No, ain't tried anything but the garden-variety lebanese cucumbers which I grow now because you don't need to peel them and they don't have too many seeds. Now that I've finally got some success in my veggie (tub) garden the problem is too much produce. Currently we are having a reasonable bean crop and there's only two of us to eat it and the missus won't let me give excess produce away to the neighbours we consider nice because she's nuts. So, you know, growing a "real haul" would cause me some stress as to what to do with it!

Pickle them! Pickled beans are great. Anything that stays crunchy after a 10 minute boil is worth pickling, from beans to beets to carrots to cucumbers.

It's surprisingly easy to can/jar pickles, because they are high acid, you only need to do the "boiling water" method (eg. No pressure cooker required).

I give away a lot of veggies too, which is also nice, but if your wife wants to hoard it all, pickle it man! My cucumbers did not do well last year, mostly due to a wet hot spring that rotted the vines on the ground and kept them blighted all summer, but I had such a bumper crop 2 years ago, I must have 50 jars of pickles still.
