Interesting coincidence, I think!

Danish rockers Volbeat took their name from the 1997 studio album 'Vol.Beat' by singer Michael Poulsen's previous band, the death metal act Dominus.

If so, and having formed in 2001, that should be prior to the first appearance in Pokémon:

the 11th Pikachu short of the Pokémon animated series. It was first broadcast in Japan on July 13, 2002

Wouldn't be surprised if the japs lifted the name from the band though, they love their metal over there.
