It's great to learn improvised weapons - if you travel they may have restrictive laws and if you can just pick up an item it's helpful
There are strikes that incapacitate, but they are dangerous. The side of your hand to the neck for example. Another on the front of the chin. A hook to the tip of the chin from the side.
There are nerve strikes in the arms and legs - above the knee outer side.
To train though you practice reflexes and condition your body through micro-fractures and healing, and you must do some sparring - but not involving getting hits to the head or you'll get white matter damage
Strength and ferocity matters. Tae quan do is primarily the strength of the legs applied. If someone closes the distance, it's a problem.
He could have kicked above the knee or performed a liver shot.
If there are close in strikes Wing Chun has redirects without absorbing the impact. Maury Thai has elbow strikes, or knee to the solar plexus. If you're grappling it's Judo or BJJ.
FMA is great for weapons, and a few others. Just don't use softwood.
It's better to just avoid fighting, in some cities though you can be attacked midday and they usually have a knife.

I broke a guys jaw twice. One in Florida and one in Dallas when I was 39.
At 65 I retain strength but have lost quickness and endurance.
I carry pepper gel and a gun. And situational awareness.
It saved me from getting mugged in a parking lot at night a few years ago.
