Anyone who has ever done any homesteading learns very quickly how ingenious and industrious early settlers were. Just the act of growing and canning food requires knowledge planning and technique. You can't just throw anything in a jar and pressure can it, there is a very specific balance that needs to be maintained between acids and natural sugars, etc.
