Does anyone know pizza?

We bought a pizza restaurant. We live in texas and have shitty hard water. I heard some places actually import nyc water. Also alot use water softeners. Does anyone have an opinion on what the best option is?

What about a commercial reverse osmosis filter and remineralizer. It's probably $3k to $5k, versus about $2.4k annually for water delivery.

I have asked several ny style places and some import water. Others say a water softener works. I don't have a brick oven. Our fat texas customers I'm sure don't notice. But I do and I want to improve the product.

Most places I understand use RO system's unless they have access to natural spring water.
Again Texas water as well as other states just suck.
Not because of water quality alone but the plumbing that's moving or holding the water.
50-70yr old pipes are fucking nasty everywhere you go.
Get a good powder test kit and or have it lab tested like we did here to see what's in the water and then you know which filtration media/method to use.
We just settled on reverse osmosis and our water is very good

Retired chef de cuisine. I'd go the reverse osmosis route, with or without the remineralizer. I assume you are concerned with the dough, and not tap water for customers.

Another pro-tip if you are after quality, and flavour is to ditch the "vegetable" oil entirely, and use lard, or beef tallow.

Also kosher salt has no additives, and is much healthier than the bromine/iodine "supplemented" shit.

My wife runs restaurants. It's her deal. We bought it for her and the older kids to work at. But she doesn't understand how water affects crust. I was seeing if anyone else knew. And guess what. I got some good helpful info. You whiney bitches can fuck off.

You don’t open a restaurant if you don’t know how you are going to cook your main product.

Have you considered that the minerals in the water in specific areas of the country cause the variability in the dough from region to region? You aren’t getting New York pizza in Tx- just like the asshats that keep Trying To sell it in Florida, they last about a year. As soon as one cancer dies, another pops right back up thinking they are reinventing the wheel.
Pizza made in the cities that heavily treat their water are consumed by people that ingest the heavily treated water daily (whether they filter it or not, when they go to their favorite restraunt and eat noodles or a salad, it’s been cooked/prepped in that water… the customers are used to it.

Ever wonder why those country diners taste so good, the local pizza in the small towns are so much better?

No offense to you personally, but a business owner who doesn’t know his product or makes fun of his “fat” customers will end up like everyone else.

I mentioned this in a comment but blend your water for 15 seconds and then try to use that. It is basically a way to get the water very very soft.

What do you think water softeners are? Salt. They use salt retard. Add more salt to your dough. I've been doing this professionally longer than your mulatto children have been alive.

Dough is ok. But the water makes a huge difference. Every good place locally I talked to either has water imported or uses a softener. I was just wondering if anyone on here actually know wtf they are talking about.

Run the water through a blender for 15 seconds. That will change the pH and soften it too. That is closer to the running mountain spring type of consistency.

I've heard of 'water restructuring' as well, it usually involves running the water over various geometric shapes.

But as far as pH is concerned, add vinegar or baking soda to even it out if necessary. You need test strips to determine where the pH actually is and to know how much to add to get it to where you want it.

Nah, the blending breaks up the minerals and changes the pH at the same time. No need for chemicals and additives. It is the same thing as structured water. I like the taste better.
