I keep both tallow and lard on hand for cooking. Far superior to other cooking oils for most things

Yep, i use pure dripping for almost everything - and it doesnt have to be a half full pan or tray (like my parents did when i were a child), just enough to cover the bottom and if i get it right it is almost all gone when cooked.

Bacon grease is good for flavor but it makes food stick to the pan and burn something terrible.

Butter is delicious but has a very low burn/smoke point so you have to be real careful with it.

Bacon fat is Lard and great for cooking biscuits/cakes et. Tallow is beef fat and has higher smoke point.

i use mine too quickly to worry about it going rancid. I get super jealous of those people who do a year batch in one sitting. One day.

I learned that tallow is particularly the fat around the kidneys, more dense and waxier than other beef fat. In any case, after rendering the crackles make good dog treats.

its actually more productive in a circular economy to make use of every bit of the resources you consume.

Avocado oil is good it isn’t a seed oil has a neutral flavor and high smoke point. The downside is that it can be expensive.
