Ooof you just triggered me. Last weekend I had a cheesecake fail. I was feeling domestic and excited for fall so decided to try a recipe I saw for a caramel apple cheesecake. Long story short, my springform pan came open and the entire thing went splat on the kitchen floor.

Oh.

3 eggs

24oz cream cheese

Lemon and orange zest optional
1 and 1/2 cup white sugar

Like 3tsps of vanilla
1/2 cup of heavy cream

Ground almond "crust" if you want butter cake pan and whish ground almond around empty out excess or pat flat

Bake 325 in a water bath for 2 hours then let cool in oven

Place in fridge for 6 hrs or overnight.cut around edges flip into a plate ( don't forget to flip it over again) Serve.

Cheesecake is child play. They made it seem so difficult but it's not.

Put smaller pan in bigger pan fill halfway with boiling water.

You don't have to actually put one pan in another. Simply a pan of water in the oven keeps the humidity up so the cheesecake doesn't dry out.

Would you suggest a bit of parchment on the bottom to make absolutely sure it doesn't stick to the bottom? Or is the crust non-stick enough on its own?

I never tried it with the parchment paper. You could.
