So why haven't jews corrupted chromosome system to make white people give births less men and instead give birth more women?

Because jews hate white men most, that would be one vector to attack: to get rid of white men before even birth.
We still see the same ratio of men and women born. I suspect there is some kind of fundamental life creation law, which dictates that "if this ratio is not followed, life is not created". Maybe that's one (of the many) reason of fall of fertility.

After my wife got pregnant recently, I see that most medical advice is designed to help you not have a healthy baby. Things that increase brain growth is considered bad by our government. Etc.

Well yes, the men are changed, but it would be much more efficient to attack sooner than the birth.
