Well actually that pancake mix is a pretty good example of a highly processed food. The pleasant connotation of the word "pancake" notwithstanding it, like all highly processed foods, is fucking terrible for your health. Cancer is only one of many potential negative outcomes of a diet of such foods.
As someone mentioned in the comments, anything fried contains a very small amount of carcinogens due to the oil being heated to 350F.
What they should be worried about is the fast food cooking oil which gets filtered and reused dozens of times. That shit is full of those carcinogenic byproducts because the oil is hot for days or weeks before being changed.
