You know why? Because they literally fucking eat what we call Mexican food ALL THE GOD DAMN TIME. we call it Mexican food, but they call it food, meaning they literally have a meal plan of fried chips and salsa for breakfast (chilaquiles), burritos and tacos for lunch and then even more burritos and tacos for dinner. THEY JUST EAT JUNK FOOD IT'S UTTERLY INSANE.

The only vegetables they eat are in salsa. It's like the Dothraki. There is no word in Mexican for lettuce.

To be fair, I do used refried beans from a can, but what is this "they"? I'm cooking some short grain rice at the moment to use in my last tortilla. Cooking some ground beef from the local market, with a pretty huge jalapeno and a tomatillo. The cheese will be oaxaca. Why would you even buy velveeta???? (that pretty much destroys your reply) Will likely add some GreenDragon jalapeno hot sauce from Trader Joe's for extra heat and flavor. Not sure if the cilantro is still viable, but plus that if it is.

everything is fried in lard. The tortilla is lard, the pork is boiled in lard, the rice is fried in lard before you add everything else.

theres a lot of rice how often are you eating rice? Because its everyday. Even the tortillas for enchiladas are dipped in lard before they assemble them.

you ever make your own refried beans? The amount of lard needed is crazy.

I have lard but have never opened it. It's been a few months since I last made rice. Made one dry cups worth and added a teaspoon of ghee, along with some lions mane mushrooms. Hamburger plus a huge chopped jalapeno and tomatillo in the skillet with leftover bacon grease from breakfast. Used the last of the cilantro. Used a couple heaping tablespoons of rice in the burrito, and about the same for the refried beans. A good line of TJ habanero sauce for some heat. Queso oaxaca around the edges to glue it shut. All in all, didn't seem that unhealthy of a meal.
