So you made a pastrami then? I've done a texas style pastrami. Full packer style brisket cured and slow smoked with that thick crust. Came out VERY good

Not a pastrami, a corned beef. The Ole corn beef and cabbage/ black eyes peas deal. Carrots, potatoes, a Sweet cornbread, and key lime pie, a key lime poundcake (i squeezed so many damn tiny limes, no way i was gonna waste that juice), and a salted Carmel cheesecake for dessert. I gained 20 fuckin' pounds over the holidays eating so much good food.
That 10# brisket took up fridge room for a week, marinating in that brine.
